Ingredients

  • 1 1/2 cups water
  • 1/2 teaspoon freshly-grated lemon zest
  • 1/2 teaspoon dried thyme
  • 1 cup couscous
  • 1/2 cup minced fresh parsley leaves - (packed)
  • 2 tablespoons olive oil
  • Fresh lemon juice to taste
  • Salt to taste
  • Freshly-ground black pepper to taste

Step 1

In a kettle bring the water to a boil. Pour over the zest, thyme and couscous. Let the mixture stand, covered, for 5 minutes. Fluff it with a fork, and stir in the parsley, oil, lemon juice, and salt and pepper.
