Lisa's Pepper Ravioli

Ingredients

  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 3 jalapeno peppers
  • 3 sliced green onions
  • 1 medium yellow onion chopped
  • olive oil
  • 1 16 oz. jar Chi-Chi's medium salsa
  • 2 16 oz. packages small, frozen, ravioli OR 1 150 count bag
  • 1/2 package chorizo
  • 2 cups shredded mozzarella cheese
  • sliced black olives

Preparation

Step 1

1. Slice peppers into thins strips, chop jalapeno peppers, diagonally slice green onions, and slice yellow onions into rings. Saute in olive oil being careful not to brown.
2. Cook ravioli according to the package directions, drain and set aside.
3. Cook sausage 7 to 8 minutes, drain and mix with salsa.
4. Layer salsa, ravioli, peppers, cheese and black olives in casserole dish twice.
5. Bake uncovered in 350 oven until cheese melts. If refrigerated bake covered for a while, then uncover.

suggestions: Could add can of mushrooms to peppers
Mix cheese and meat ravioli
Try using some Monterey jack cheese

Can be made ahead of time and refrigerated.
