  • 1/2 lb bacon
  • 1 lb pork,sausage no casing
  • 1/2 andouille sausage diced
  • 3 tbsp lard
  • 4 skinned and boned chicken thighs cut into 1 inch cubes
  • Salt and pepper
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 3 celery ribs, diced
  • 3 garlic cloves, minced
  • 2 cups white rice
  • 1 tsp thyme
  • 2 bay leaves
  • 11/2 tbs smoked paprika
  • Red pepper
  • Celery salt 1 cup crushed tomatoes
  • 2 cups chicken stock
  • 11/2 lb shrimp
  • 1 bunch scallions

Step 1

Cook meats, add veggies, add broth and wine and spice...add rice simmer for 15 min ...add shrimp and scallions...then turn off stove and let sit
