Ingredients
- 1/2 lb bacon
- 1 lb pork,sausage no casing
- 1/2 andouille sausage diced
- 3 tbsp lard
- 4 skinned and boned chicken thighs cut into 1 inch cubes
- Salt and pepper
- 1 large onion, diced
- 1 bell pepper, diced
- 3 celery ribs, diced
- 3 garlic cloves, minced
- 2 cups white rice
- 1 tsp thyme
- 2 bay leaves
- 11/2 tbs smoked paprika
- Red pepper
- Celery salt 1 cup crushed tomatoes
- 2 cups chicken stock
- 11/2 lb shrimp
- 1 bunch scallions

Step 1
Cook meats, add veggies, add broth and wine and spice...add rice simmer for 15 min ...add shrimp and scallions...then turn off stove and let sit
