Jamaican Johnny Cakes

Ingredients

  • 4 cups all purpose flour
  • 1 tsp baking powder
  • dash of salt
  • 4 cups vegetable oil, for frying
  • 1 Tbsp butter
  • 1 1/2 cups water

Preparation

Step 1

Sift together dry ingredients. Blend in melted butter and water to create a firm dough. Knead dough well. Dust a working surface with flour. Cut dough into 14 pieces and shape into a circle 1/2 inch thick. Heat oil until hot. Test by dropping a pinch of dough into oil, if it rises to the top, oil is ready. Fry cakes a few at a time until golden brown on both sides. Drain and serve. Makes 14.
