Ingredients

  • 3 Tbsp butter
  • 1 1/2 cups finely chopped meat (roast beef, ham, veal, chicken or shrimp)
  • salt and pepper to taste
  • 1/2 tsp Worcestershire sauce
  • 3 Tbsp flour
  • 1 Tbsp parsley, minced
  • 1 cup fine cracker crumbs
  • 3/4 cup stock
  • 1 egg, beaten
  • 2 Tbsp water
  • 1/2 cup mustard

Preparation

Step 1

Make a thick sauce of butter, flour and stock. Add meat, parsley, Worcestershire sauce, salt and pepper. Chill mixture and form into 1 inch balls. Roll balls in crumbs. Combine egg and water. Dip balls in egg and water mixture and roll in crumbs again. Fry balls in hot fat until golden brown. Serve hot with mustard. Makes 2 dozen.
