Rice on the Wild Side

Wonderful cold salad using wild rice and vegetables in a curry vinegrette.

Ingredients
- Rice:
- 1/3 cup wild rice
- 3/4 tsp salt
- 2 cups water
- Salad:
- 4 oz. cubed smoked deli turkey or ham
- 3/4 cup pepper jack cheese, julienned
- 3/4 cup cauliflower florets
- 1 carrot, julienned
- 3/4 cup walnut halves, optional
- 3/4 cup red bell pepper, strips
- 4 green onions, thinly sliced
- black pepper to taste
- Dressing:
- 1/2 cup canola oil
- 2 Tbsp. lemon juice
- 2 Tbsp. white wine vinegar
- 1/2 tsp. dry mustard
- 1/2 tsp. curry powder
Preparation
Step 1
Rice:
Cook rice according to package directions.
Dressing:
1. In a small bowl beat dressing until emulsified.
2. Pour over warm cooked rice.
Salad:
1. In a large mixing bowl combine all ingredients.
2. Add a few grinds of black pepper to taste.
3. Chill overnight
Variations:
Add any other types of crunchy fresh vegetables.
