Weeknight Skillet Fajitas

Ingredients

  • 1 1/2 cups plus 2 Tablespoons Wish-Bone Italian Dressing
  • 1 Tbsp. vegetable oil
  • 1 lb. boneless skinless chicken breasts, thinly sliced
  • 1 bag (14 oz.) Birds Eye® Recipe Ready Tri Color Pepper & Onion Blend
  • 1 teaspoon ground cumin
  • 1 tsp. salt
  • 8 flour tortillas, warmed

Preparation

Step 1

Pour 1/2 cup dressing over chicken in glass baking dish or plastic bag. Cover or close bag. Marinate in refrigerator 30 minutes. Remove chicken, discard marinade. Heat oil in large skillet over medium-high heat and cook chicken, stirring occasionally 5 minutes. Stir in Tri-Colored Pepper & Onion Blend and continue cooking, stirring occasionally, 5 minutes or until chicken is thoroughly cooked and vegetables are tender. Stir in remaining dressing and heat through. Serve in tortillas.
