Step 1
preheat oven to 400. in bowl combine 1 tbsp Italian seasoning, 1 tsp black pepper, 2 tbsp paprika, 2 tbsp salt and 1 ½ tsp cayenne pepper and mix and season fish with rub. Need 4 (6 oz) portions skinless and boneless salmon. Heat large skillet over medium high heat and ad 2 tbsp butter and 1 tbsp grapeseed oil. Once butter has melted add the fish and cook about 2 minutes per side. Then transfer entire pan into oven and cook another 4-6 minutes. For the blue cheese sauce put ¼ c white wine in saucepan and reduce by half. Then add ½ c heavy cram and allow to reduce. Then add ¾ c crumbled blue cheese and whisk until smooth. I tried this summer 2009 and it was very good.
