Step 1

mix 2 c water, ½ c cognac, ½ honey and 2 tbsp salt and 2 tbsp pepper in a pan and heat low heat until honey and salt dissolved. Cover and put in fridge for one hour to cool. Then put salmon fillets (up to 1 ½ lb) in brine and bine for 3-4 hours. Then grill. I tried this on 11/2/09 and it was very good.
