add 2 c water, 1.5 c chicken stock and 2 cups rice to a rice cooker and cook until al dente (about 15 minutes). Then fluff and add the following mixture, that was mixed it a bowl; 1 c chopped Italian parsley, ½ c chopped cilantro leaves, 4 tbsp minced garlic, ¼ c fresh lime juice, 2 tbsp olive oil, salt and pepper. We tried this on 8/24/09, Jackie and I really liked it. The rice was a little too done. The kids didn’t like it too much because they said it was too sour. I could cut the spice mixture about in half and they would probably like it better then. I kept left overs and it reheated fine.
