INSIDE OUT BLUE CHEESE BURGERS

buy 1 ½ lbs ground beef and split into four patties. Then mix ½ c (2-3 oz) of crumbled blue cheese with 2 oz cream cheese and 2 tbsp chopped parsley. Mix well and form into disks and put in fridge to 20 minutes to form. Then mix beef with salt and pepper and then add one disk of cheese and pull beef around to seal in cheese. I tried this on 7/13/09 and they were very good. I made it for Jackie but she was late due to work so she did not get a chance to try it.
