cook 2 (10 oz) filet mignon on a cast iron skillet that has been pre heated on stove. Cook just about two minutes each side until well seared. Cover with salt and pepper and olive oil. Then put steaks in pre heated 400 degree oven and cook until done, about 15 minutes. For medium rare, 125 degrees. Then for ROQUEFORT CHIVE SAUCE in sauce pan bring to boil 1 ½ c heavy cream and then reduce heat to a minor boil and cook about 20 minutes, stiring periodically until cream becomes thick and creamy. Then add 2 oz Roquefort cheese, salt and pepper and 1 tbsp fresh chives. I tried this on 4/21/09 and it was very good. Kyle had the steak and he liked it a lot. The sauce was very good. I used an entire container of chives and still very good.
