for the dry rub mix 1 tbsp dried minced onion, 2 tsp salt, 2 tsp garlic powder, 2 tsp dried oregano, 1 tsp dried rosemary, 1 tsp caraway seeds, 1 tsp dried marjoram, 1 tsp celery seed, ¼ tsp cayenne pepper. Mix well and rub on a 3-4 lb boneless chuck roast that has been halved. Then put in a slow cooker and cook on low for 6-8 hours. We tried this on 01/18/09. Jackie and I liked it, the boys hated it. I cooked it for about six and a half hours and the meet was plenty done and moist but it was not done well enough to pull apart. I had to cut it. Also, I thought much of the fat would melt off into the juices and it did not. So, in future if I do this receipe, trim the meat before hand. Also, you do not add any liquid, it all comes from the meat during cooking. I think I could have cooked it at least another hour and it would have been fine. The piece of meat I used was just under 3 lbs and there was over half of it as left overs.
