Step 1
slice 3 medium potatoes and put in large bowl. Then heat in saucepan 6 oz cream cheese, 1 can chicken broth, 1 tbsp Dijon mustard and heat to melting point. Then add over potatoes and mix well with salt and pepper. Then pour them in a lightly greased 13x9 baking dish. Then mix 2 c crushed Ritz crackers, 3 tbsp parmesean cheese and 2 tbsp melted butter. Sprinkle this over the top and bake in a pre heated 350 degree oven for one hour. We tried these on 1/14/09 and they were really really good. The receipe called for onion that was sauted at the beginning then the cream cheese mixture is added but I left onion out.
