GRILLED ROSEMARY CHICKEN THIGHS WITH SWEET AND SOUR ORANGE DIPPING SAUCE

Step 1
take a pkg of skinless, bonless chicken thighs and cut up into chucks and put on skewers. Then mix 1 tbsp minced fresh rosemary, 2 tsp brown sugar, salt, pepper and red pepper flakes. Pour olive oil on meat and add mixture and press in. Then grill on medium high heat. Meanwhile in a small sauce pan mix 1 c orange marmalade, ¼ c rice vinegar and 1 tsp minced fresh rosemary. Only heat this up to warm it, do not boil it or get it too hot. We tried this on 1/14/09 and Ryan loved it, he had all his and Kyle’s. Kyle did not like it. Jackie and I loved it too. I left the red pepper flakes and rosemary out of the mixture for the boys. One pkg made four skewers. The chicken did take a lot of work in trimming off the fat. Also, when I grilled it, start with rack for skewers so meat sears, then put directly on grill rack (this should prevent sticking). The sauce was very, very good. The meat was good but it is dark meat so this may have been why Kyle did not like it.
