Preparation
Step 1
use vegetable oil and heat to medium, then dredge pork chops in salt and peppered flour, then two beaten eggs, then in seasoned bread crumbs and cook until done, about 4-5 minutes per side. Then, to make the sauce mix 2/3 c mascarpone cheese with 3 tbsp mayonnaise. When incorporated, then mix in ¼ c whole milk by pouring in slowly. Then mix in ¼ c drained and chopped capers, the zest of one lemon, 1 tbsp fresh chopped parsley and salt and pepper. We tried this on 10/12/2008 and Jackie and I really liked it. The sauce was very good and would probably be good on fish. Kyle did not like the pork. Neither boy liked the sauce.
