Step 1
bring 1 c EVOO along with one head garlic gloves pealed to a boil, when it comes to a boil, reduce heat to low and cook for five minutes. Then off the heat and let cool. Then boil for 15-20 minutes 3 lbs Yukon gold potatoes to very soft consistency for mashing. When done, put in bowl and mash along with salt and pepper, the garlic oil, ¼ c heavy cream, ¾ c of the cooking water from boiling the potatoes. We tried these on 5/25/08, Ryan really liked them, Kyle did not so much, Jackie was at work. I thought they were OK. A little dry and unflavored but the garlic flavor was good, subtle and not too much for a non garlic lover.
