Step 1

– Preheat oven to 350 degrees and spray a 9x13 baking dish with vegetable oil cooking spray. In large mixing bowl combine 2 c cooked chicken breast meat cubed, 1 c diced celery ½ c silvered almonds ½ tsp salt and pepper, 2 tbsp fresh lemon juice, 1 c mayo and 1 c sharp Cheddar. Mix and put in baking dish and cover with 2/3 c crushed potato chips. Bake for 20 minutes or until bubbly. I tried this 02-2007. It was ok, kids kind of liked it, only problem was the leftovers were not good. The nice thing is it was quick and easy.
