2 tbsp olive oil, 1 c chili beans, 2 cloves minced garlic, 1 c drained corn, 16 large shrimp – peeled, deveined and butterflied, ½ tsp Cholula Hot Sauce, 2 tbsp chopped fresh cilantro, 1 c sliced mushrooms, 1 c Georgia Pecans, ½ tsp chili powder, ¼ c tequila, 1 c salsa. Serve this with cooked rice, tortillas and an array of your favorite condiments: sour cream, guacamole, etc. In a sauté pan heat the olive oil over medium heat. Add the minced garlic and heat for approx 30 seconds. Add the shrimp and cook for approx 1 minute on each side. DO NOT OVERCOOK. The shrimp will continue to cook in the sauce. When shrimp in turned add the sliced mushrooms, pecans and chili powder. Cook for 1 minute. Pull the pan away from the head and CAREFULLY flambé with the tequila. When the flame goes out, add the salsa, chili beans, corn, hot sauce and the chopped cilantro. Enjoy over the rice or with tortillas and condiments.
