Ingredients
- 3 pounds chicken pieces
- dash of pepper
- 3 Tbsp olive oil
- 1/4 tsp paprika
- 1 cup dry white wine
- 2 garlic cloves, crushed
- 1/4 tsp dried oregano
- 1 medium onion, finely chopped
- 1/2 green bell pepper, chopped
- 1/4 cup tomato puree
- 1 lemon, juiced
- 1/4 tsp cumin
- 1 bay leaf
- 2 cups rice, uncooked
- 4 cup chicken stock

Step 1
Season chicken with garlic, lemon juice, pepper, cumin and oregano. In a large saucepan, heat oil over medium heat. Saute bell pepper and onion until onion is translucent. Add seasoned chicken pieces and brown evenly on all sides. Pour off any excess fat. Stir in remaining ingredients except rice. Bring to a boil, then reduce to a simmer, heat for 10 minutes,. Add rice, boil for 3 minutes, reduce heat and cover. Cook for 25 minutes. Serve hot.
