Pan-roasted Halibut

Ingredients

  • 2 lbs halibut fillet, cut into 12 rectangular pieces
  • Kosher salt
  • Canola Oil
  • EVOO
  • Fleur de Sel

Step 1

Position oven racks in the lower and upper thirds of the oven and preheat to 350 degrees.
Remove fish from refrigerator and let stand at room temperature for 15 minutes. Remove any remaining bones. Season both sides of each fillet with salt.
Add some canola oil to 2 large oven proof frying pans and heat over high heat until it shimmers. (or fry in batches in 1 pan). Put fish presentation side down in pan and lower to medium high heat. Cook for 4-5 minutes until the bottom of the fish is golden. Keep on same side and lower the heat to medium low heat and cook for 2 more minutes.
Transfer the pans to the oven and cook for about 2 minutes until the fish is just cooked through.
Remove from oven, flip the fish over and let the 2nd side sit for about 30 seconds. Transfer fish to a platter and serve with a drizzle of olive oil and sprinkle with fleur de sel.
