Ingredients
- 3 TBL olive oil
- 2-3 LB fresh filet of mahi mahi
- flour, for dipping fish
- 1 LB fresh small prawns, peeled &
- deveined
- 2 cloves garlic, chopped
- 1/2 tsp crushed red pepper
- 1 sm. yellow onion, thinly sliced
- 3 med tomatoes, diced
- 3/4 C white wine
- 1 C pitted black olives
- 2 TBL chopped fresh basil
Preparation
Step 1
pour olive oil into large frying pan & heat
when oil is hot, dip mahi mahi into flour & saute fish in pan for approx.
3 min per side
add prawns, garlic, crushed red pepper & onions
cook until golden
add wine & cook for another 2 min
add chopped tomatoes, olives & basil
let simmer for 10 min or until sauce has reduced
