Yeast Rolls

Ingredients

  • Variation:
  • 1 cup water
  • 4 pkg. dry yeast or 2 oz. bulk yeast
  • 3 cups milk
  • 3/4 cups sugar
  • 4 tsp. salt
  • 3 eggs
  • 3/4 cups butter
  • flour
  • 2 Potatoes, cooked, mashed or sieved, and reserve water

Preparation

Step 1

Dissolve yeast in warm water from cooked potatoes

Scald milk & beat in other ingrediants.

Add flour 1 cup at a time, beating throughly after each addition.

Knead.

Put dough in greased bowl and cover.

Let double. Knead dough.

Form into rolls. Let double.

Variation:
Peel and cut up 2 medium potatoes. Cover with 3 cups of water. Cook until tender. Rice the potatoes and save the liquid to be used to dissolve yeast. Can mix with butter and sugar and salt before adding to the rest of the ingrediants.

If you form into rolls, Bake at 400* for 10-12 minutes.

Note; I use potato water for 1 cup water and potatoes mashed to add.
