Potato and kale Soup

Potato and Kale soup-like the 1 at the Olive Garden. i have never had it there but this soup is good! Besides the Kale I usually have all this stuff in my freezer.

Ingredients

  • Potato and Kale soup-like the 1 at the Olive Garden
  • 1 lb ground sausage- I used pork sausage and added some italian seasoning but italian sausage would also work here
  • 4 slices of bacon chopped
  • 1 medium onion chopped
  • 2-3 cloves of garlic minced
  • salt and black pepper-to taste
  • crushed red pepper flakes to taste-depending if kiddos will be eating it
  • 4-6 peeled and thinly sliced potatoes-I used russets but most types would work fine-if I had it to do over I would have added more than 4 because my soup was pretty watery
  • Chicken broth 4-6 cups
  • Chopped Kale-Amanda said 1 cup but I used a whole bunch-it is very mild and I did not regret it. Especially because I had like 6 bunches!
  • 1 cup of heavy cream, milk or I used evaporated milk( I like the low fat kind) I am sneaky like that!

Preparation

Step 1

Brown the sausage and bacon together in a dutch oven(big pot) and drain the fat reserving 2 tablespoons in the pan. Remove the meats from the pot and set aside. Add onion, garlic,red pepper flakes salt and black pepper to the hot fat in the pot until soft about 10 minutes. Add chiken broth and potatoes to the onions and garlic and bring to a boil. Then, simmer for 20 minutes or until potatoes begin to disolve in the soup. Add sauage and bacon back in and bring back to a simmer. Stir in Kale and cream before serving and avoid boiling after the dairy has been added. I froze 1/2 of my leftovers and look forward to eating it again soon! Enjoy.
