Ingredients
- 1/2 log of vegan sausage
- 1 1/2 c egg beaters
- 2 c shredded cheese
- 1/2 c chopped bell pepper
- 3 c shredded potato
- 3 tbsp. butter
- salt and pepper
- chopped green onion
Preparation
Step 1
brown sausage in pan, set aside. combine egg, cheese, bell pepper. set aside.
in bowl, combine potato, butter, salt and pepper, divide evenly into 12 greased muffin cups. press mixture onto sides and bottom of muffin cups. bake at 400 degrees for 12 minutes or until browned. remove from oven and divide sausage evenly into muffin cups.
spoon egg mixture evenly into muffin cups. sprinkle with green onion. return to oven and bake 15 minutes or until set.
