  • 2 1/2 c all purpose gf flour
  • 1 tbsp. baking powder
  • 1/2 tsp salt
  • 1/3 c butter
  • 2 eggs
  • 3/4 c whipping cream ( 2/3 c milk, 1/3 c oil)
  • 1 c shredded zucchini
  • 1/3 c grated parmesan cheese



Step 1

heat oven 350 degrees.
in large bowl, stir flour, baking powder and salt.
using fingers cut butter into flour mixture until resembles coarse crumbs. make a well in center of flour mixture and set aside.

in medium bowl, stir egg and whipping cream. add to flour. squeeze zucchini to remove water and add to flour. add cheese. stir until moistened.
turn dough onto floured surface and knead until nearly smooth. divide in half.
pat half of dough into 6 inch circle. cut into 6 wedges. repeat with remaining half.

places wedges on ungreased baking sheet. 2 inches apart.

bake 15 minutes or until golden.
