Ingredients
- 1 pound ground beef chuck
- 1/2 pound ground pork
- 1/2 pound ground veal
- 1/4 cup parsley (finely chopped, plus more for garnish)
- 3 cloves garlic (finely chopped)
- 1/2 cup parmesan cheese (grated)
- 1 cup plain breadcrumbs (soaked in water)
- 1/2 cup water
- 2 large eggs (lightly beaten)
- 1 teaspoon kosher salt
- 3/4 teaspoon freshly ground black pepper
- marinara sauce (store-bought, to serve)
- ricotta (to serve)
Preparation
Step 1
Preheat oven to 425ºF. Line 2 baking sheets with parchment paper.
In a large bowl, add ground beef, pork, veal, parsley, garlic, cheese, breadcrumbs, and eggs and mix to combine. Season with Kosher salt and black pepper. Form mixture into golf ball sized balls (about 2-3 ounces each) and place on prepared baking sheet. Bake for 10-15 minutes, until browned and cooked.
Remove from the oven. Into a large saucepot with Marinara sauce over low-medium heat, add the meatballs and simmer for 20 minutes, until ready to serve.
Serve with a dollop of fresh ricotta and sprinkle with parsley.
