Ingredients
- 2 cups sliced leeks
- 1/2 cup chopped carrot
- 1/2 cup chopped celery
- 2 tbsp unsalted butter
- 2 cups quartered button mushrooms
- 1 tbsp minced garlic
- 1/4 cup flour
- 1 tsp minced fresh thyme
- 1/4 tsp nutmeg
- 1/4 tsp black pepper
- 1/4 cup dry sherry
- 4 cups low sodium chicken broth
- 2 cups cubed cooked turkey
- 1/2 cup heavy cream
- salt to taste
- Minced fresh parsley

Preparation
Step 1
Sweat leeks, carrot, and celery in butter in a large saucepan over medium heat until soft, 5 minutes. Increase heat to medium high. Add mushrooms and garlic; sauté 3 minutes, stirring often. Sprinkle flour, thyme, nutmeg, and pepper over vegetables; cook 1 minute stirring constantly. De-glaze pot with sherry and simmer until nearly evaporated. Stir in broth, turkey, and cream; bring soup to a boil; reduce heat to medium and simmer 5 minutes; season with salt. Garnish with parsley.
