Mini Apple Pies

Ingredients

  • Crust:
  • 3/4 cup flor
  • 1/4 cup butter
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1 egg
  • 2 tbsp milk
  • Filling and topping:
  • 1 large apple
  • 1 tsp ginger
  • 1 egg, slightly beaten
  • 1-2 tbsp sugar

Preheat oven to 425*.

For the crust, place flour in large bowl. Cut in butter using a pastry blender or two knives until coarse crumbs form. Stir in the sugar and baking powder.

Combine egg and milk in small bowl; mix well. Add to the flour mixture, stirring until a dough forms. Cover and set aside.

For the filling, peel, core and coarsely grate the apple. Place in a small bowl. Stir in the ginger.

Roll dough into a 16x8 rectangle on a lightly floured surface. Cut into eight 4 inch squares. Spoon about 1 tbsp of the apple mixture onto the center of the dough. Brush edges of dough with the beaten egg. Fold corners of the dough toward the middle, covering the filling. Pinch edges to seal. Place the filled squares on an ungreased baking sheet.

For the topping, brush tops of the squares with the remaining egg and sprinkle with sugar. Bake until lightly golden browned, 8-10, minutes.

Cool the pies on the baking sheet for 1-2 minutes. Serve warm or transfer to wire rack to cool completely.
