Ingredients

  • 1/4 c. dry breadcrumbs
  • 1/4 c. (1 oz.) grated Parmesan cheese
  • 1/4 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/8 tsp. pepper
  • 2 tblsp. milk
  • 2 1/2 c., 1" thick sliced zucchini (about 2)
  • cooking spray

Preparation

Step 1

Preheat oven to 425.

1. Combine breadcrumbs, Parmesan cheese,salt, pepper & garlic powder.
2. Place milk in shallow bowl.
3. Dip zucchini slice in milk & dredge in breadcrumb mixture.
4. Place coated slice on an ovenproof rack coated with cooking spray. Place rack on baking sheet.
5. Bake 30 minutes until browned & crisp.
6. Serve immediately.
