Ingredients

  • 1 T olive oil
  • 1/3 C chopped onion
  • 1/3 C chopped celery
  • 1 bay leaf
  • 1/2 t chopped garlic
  • 1/2 t minced jalapeño
  • 2/3 C wild rice
  • 2 T toasted pignoli
  • 2 C chicken broth

Preparation

Step 1

In medium saucepan, heat EVOO; add onion, celery, garlic & jalapeño ( for less heat add jalapeño after preparing rice} Cook 2 min. Add remaining ingredients; bring to a boil. Cover & simmer 50-55 min. Uncover & cook until all liquid is absorbed. Discard bay leaf & serve
