BBQ Grilled Salmon

Ingredients

  • For the sauce:
  • 1 1/2 T olive oil
  • 3 med. seeded, minced jalapeños
  • 2 large minced garlic cloves
  • 2/3 C rice wine vinegar
  • Juice of 1 lemon
  • Juice of 1 lime
  • 1 1/2 C bbq sauce
  • 3 T honey
  • thinly sliced mint leaves
  • For the salmon:
  • 3 large minced garlic cloves
  • 1 T minced ginger
  • 2 T brown sugar
  • 1/2 t Old Bay seasoning
  • Salt & pepper to taste
  • 2 T olive oil
  • 1 large salmon filet (@ 2 1/2 lbs)

Preparation

Step 1

For the sauce: Heat olive oil in small saucepan over med-hi heat. Add jalapeños & garlic. Cook 2 min, stirring often. Pour in vinegar, lemon & lime juices. Swirl in bbq sauce, honey, & mint. Simmer 1-2 min. Set aside & cover to keep warm.

For the fish: Place crushed garlic in mixing bowl. Add ginger, brown sugar, seasoning & salt & pepper. Stir into a paste. Drizzle in olive oil & mix well. Rub paste all over salmon.
Grill on indirect heat 7-10 min. Drizzle sauce over cooked salmon & serve immediately.
