Copycat KFC Cole Slaw

This recipe has been modified to work with the South Beach diet. Letting it chill for 2 to 3 hours is helpful for the flavors.

  • 8

    cups cabbage, chopped very fine (1 head cabbage)

  • ¼

    cup finely shredded carrot (1 carrot) -(omit for Phase 1)

  • (I have substituted 16 ozs. pkg preshredded cole slaw mix found in the produce dept. in place of cabbage and carrots.)

  • cup Splenda

  • ½

    tsp salt

  • tsp pepper

  • ¼

    cup milk

  • ½

    cup mayonnaise (light only)

  • ¼

    cup buttermilk (low fat)**

  • 1-½

    tbsp white vinegar

  • 2-½

    tbsp lemon juice

  • **use low fat milk with a bit of vinegar as a substitute for buttermilk


* Be sure the cabbage and carrots are chopped up into very fine pieces. (or use prepackaged cole slaw mix) * Combine sugar, salt, pepper, milk, mayonnaise buttermilk, vinegar and lemon juice and beat until smooth. * Add the cabbage and carrots and mix well. * Cover and refrigerate for at least 2 hours before serving to blend flavors.
