Potato and Omelet Breakfast Bites

  • 1 bag tutor tots, thawed
  • nonstick cooking spray
  • 1 each: red and green peppers, chopped
  • bacon, cooked and crumbled
  • ham, diced
  • 8 eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese



Step 1

Preheat oven to 400*. Grease muffin pan.

Place 3 tots in each muffin tin. Take a small cup and squish them flat into bottom of tin.

Bake for 10 minutes. Remove from oven.

Lower temperature to 350*

Sprinkle over each cup: peppers, bacon and ham.

Whisk eggs and milk with a fork. Pour mixture into each tin. Sprinkle with cheddar cheese.

Bake for 20 minutes or until egg is cooked through,
