Pappardelle with caramelized onions

- salt and pepper
- 9 oz pappardelle or wide noodles
- 2 tbsp olive oil
- 1 cup caramelized onions, chopped
- 2 garlic cloves, sliced
- 1/2 cup fresh parsley, chopped
Cook pasta in salted water until al dente. While cooking, heat oil in large skillet over medium. Add onions and garlic, stir for 1 minute.
Reserve 1 1/2 cups water from pasta, add to skillet. Drain pasta, add to skillet. Cook, tossing, until liquid reduces to create a sauce, about 3 minutes. Serve topped with parsley.
