Butter Cups

Ingredients
- 17 ounces organic dark chocolate 80% cocao, chopped
- 1/4 cup organic almond butter
Preparation
Step 1
Simmer some water in the bottom of a double boiler over medium heat. Place chopped chocolate in the top pan. Allow it to melt slowly, until shiny.
Meanwhile, in a small saucepan slowly heat the almond butter over low heat. Also, set out six paper muffin liners on a small cookie sheet.
When chocolate is ready, spoon a tablespoon into the bottom of each paper liner. Spoon a tablespoon of almond butter into the center. And top with another tablespoon of melted chocolate. Ensure it completely covers the almond butter.
Place cookie sheet with filled paper liners in the fridge until set. Carefully remove from liners and enjoy.
