A-Z Bread
This recipe is reprinted from the Contra Costa Times 06/01/1977
Made 12/2/12 - Used 1 cup whole wheat flour for 1 cup white, 1 cup sugar, 1 cup chopped apples and 1 cup chopped apricots soaked in ¾ cup water and ¼ cup brandy. No nuts. Kind of dry but tasted good. Next time will try adding up to 1 cup applesauce to make it more moist.
Ingredients
- 3 cups flour - substitute up to 1 cup whole wheat
- 1 tsp salt
- 1 tsp soda
- 3 tsp cinnamon (optional)
- 1 tsp baking powder
- 3 eggs
- 1 cup oil - can replace all or part with sugar free applesauce
- 1 1/2 cups sugar
- 2 cups A-Z
- 3 tsp vanilla
- 1 cup chopped nuts
Preparation
Step 1
Sift dry ingredients; set aside. Beat eggs in a large bowl; add oil and sugar; cream well.
Add A-Z and vanilla. Add dry ingredients. Mix well. Add nuts. Spoon into 2 well greased loaf pans. Bake in preheated oven at 325 degrees for 1 hour. Makes 2 large loaves.

Applesauce
Apricots - chopped
Bananas - mashed
Carrots - grated
Cherries - pitted and chopped
Coconut - fresh, ground
Dates - pitted and finely chopped
Eggplant - ground
Figs - finely chopped
Grapes - seedless
Honey - omit sugar above
Lemons - use only ½ cup of juice
Marmalade - omit 1 cup sugar
Mincemeat
Oranges - chopped
Peaches - fresh or canned chopped
Peppermint - use only ½ cup
Pears - chopped
Pineapple - canned, crushed, well-drained
Prunes - chopped (use only 1 cup)
Pumpkin - canned
Raisins
Raspberries
Rhubarb - finely chopped
Strawberries - fresh or well-drained frozen
Sweet Potato - grated coarsely
Tapioca - cooked
Tomatoes - use only ½ cup sugar
Yams - cooked and mashed
Yogurt - plain or flavored
Zucchini - ground or grated, well drained
Suggested combinations:
Mashed banana/chocolate chips/walnuts
Grated apple/dried cherries/pecans
Grated carrots/coconut/pecans
Spaghetti squash/raisins/pecans
