    cup fresh flat-leaf parsley, tightly packed (about 1 bunch of parsley)

    cup fresh cilantro, tightly packed (about 1 bunch of cilantro)

    cup diced red onion

    Tablespoons fresh oregano, tightly packed (optional)

    cloves of garlic, peeled

  • 2

    Tablespoons fresh lemon or lime juice

    Tablespoons red wine vinegar

  • 1/4

    tsp sea salt

  • 1/4

    tsp freshly-ground black pepper

  • 1/4

    tsp red pepper flakes, or more, to taste

    cup good-quality olive oil
