Halibut - Grilled Halibut Serandeado (spanish for BBQ)

Ingredients

  • 4 halibut fillets
  • 1/2 cup freshly squeezed lemon juice
  • 1 med. serrano chile, chopped
  • 1 Tbsp. Worcestershire sauce
  • 1/2 tea. coarse salt
  • 1/2 tea. pepper
  • 1/4 cup coarsely chopped cilantro
  • Grilled green onions

Preparation

Step 1

In a blender, combine lemon juice, chile, worcestershire sauce, salt and pepper. Cover and blend until smooth. Pour mixture over fish. Seal bag and refrigerate for 30 minutes, turning once. (do not marinate longer than 30 minutes). Drain, reserving marinade.

Grill directly over medium coals 4-6 minutes or until fish flakes, turning once and basting with reserved marinade halfway through grilling.

Sprinkler fish with cilantro and sason to taste with salt and pepper. Serve with lemon wedges and, if desired, grilled green onions.
