Ingredients
- 4 cups fresh peaches, peeled, pitted and roughly chopped
- 5 cups sugar
- 2 habanero peppers, ste3ms and membranes removed, finely chopped
- 1 orange, flesh only
- 3/4 cup water
- 1 (3 oz) packet pectin
Preparation
Step 1
Place the peaches and sugar into a large pot. Turn the heat to medium-high, stirring well until the sugar is dissolved. Add the rest of the ingredients, except for the pectin, and bring to a boil, cooking for about 10 minutes. Now, carefully increase heat and bring to a boil (one that can't be stopped when stirred). Add the pectin, then continue boiling at this level for 1 minute. Immediately remove from the heat and set aside.
All the marmalade to sit for 15 minutes. Ladle into sterilized jars, seal with lids and process in a hot water bath for 10 minutes.
