Green Cabbage Soup (the Monastery)

  • 2 1/4 c. cabbage
  • 4 med. potatoes
  • 1 diced onion
  • 2-3 garlic cloves, chopped
  • 7 oz. chourico (sausage) sliced
  • 1 tsp. fresh parsley chopped
  • 2 tsp. salt
  • 2 T. olive oil

Step 1

Prepare the cabbage by removing the core & the tough outer leaves. Rinse well, drain & separate leaves. Add the potatoes & onions to a stock pot & toss with the garlic & olive oil. Cover with water (6 c.) & bring to a boil. Reduce heat, cover & simmer for 15 min. or until potatoes become soft. In the meantime, roll up the cabbage leaves & slice them as thinly as possible. When the ingredients are cooked, use a immersion blender to cream the potatoes, garlic & onion. Add the cabbage, the sliced chourico & a pinch of salt. Bring to a boil once more, cover & simmer 10 min. Garnish with sprigs of parsley & an extra drizzle of olive oil.

Makes 4 servings.
