Ingredients

  • •6 to 7 small potatoes, baked
  • •1 cup sharp cheddar cheese, grated
  • •¼ cup butter, melted
  • •¾ cup bacon, cooked and chopped
  • •½ cup sliced green onions
  • •Sour Cream to garnish

Preparation

Step 1

1.To bake potatoes, poke holes with a fork in potato on each side.
2.Bake potatoes at 400 degrees F for 40 to 50 minutes, or until done. (Do not cover with foil)
3.Allow potatoes to cool for 15 minutes.
4.Slice potatoes lengthwise and carefully scoop out the middles, leaving about an ⅛ of an inch of potato to help it keep it's shape.
5.Brush both sides of the skins with butter, and lightly salt and pepper them.
6.Return to the oven for 5 more minutes.
7.Remove from the oven and sprinkle cheese and bacon over the top and return to the oven for 2 minutes, or until the cheese is melted.
8.Garnish with sour cream and green onions.
