Carrot Ginger Soup


Freshly grated ginger with sauteed carrots, onions and garlic gives a taste of heat and flavor.

  • 2 tbsp butter
  • 1/2 cup onion, finely chopped
  • 2 tbsp fresh ginger, grated
  • 1 sml clove garlic
  • 3 large carrots, grated
  • 3 1/2 cups vegetable stock
  • 1/2 tsp brown sugar
  • 2 scallions, chopped
  • Salt
  • 1/4 - 1/2 cup milk (optional)

Preparation time 10mins
Cooking time 20mins

Step 1

Melt butter
Saute onion, ginger and garlic
Add carrots and stir
Add stock and brown sugar
Lower stove to simmer until carrots are tender
Add salt to taste
Cool carrot mixture then blend to smooth texture.
If you want a creamier soup, add milk to liking
