Ingredients

    tbsp butter

  • 1/2

    cup onion, finely chopped

  • 2

    tbsp fresh ginger, grated

  • 1

    sml clove garlic

  • 3

    large carrots, grated

  • 3 1/2

    cups vegetable stock

  • 1/2

    tsp brown sugar

  • 2

    scallions, chopped

  • Salt

  • 1/4 - 1/2

    cup milk (optional)

Directions

Melt butter Saute onion, ginger and garlic Add carrots and stir Add stock and brown sugar Lower stove to simmer until carrots are tender Add salt to taste Cool carrot mixture then blend to smooth texture. If you want a creamier soup, add milk to liking
