APPLE - CARROT MUFFINS

Ingredients

  • 2 eggs
  • 3/4 c. sugar
  • 1/4 c. oil
  • 2 c. chopped Granny Smith apples
  • 1/2 c. shredded carrots
  • 2 c. sifted flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt

Preparation

Step 1

Combine eggs, sugar and oil in mixer bowl. Beat until well blended. Stir in apples, carrots and sifted dry ingredients. Fill greased muffin cups 2/3 full. Bake at 325 degrees for 20-25 minutes or until brown.
