Spaghetti Squash with & Olives

Ingredients

  • 1 small spaghetti squash (2 1/2#)
  • 1/4 cup pitted kalamata olives, chopped
  • 2 Tbsp. Pecorino Romano cheese
  • 2 Tbsp. parsley, chopped
  • 1 Tbsp. olive oil
  • 2 tea. red wine vinegar
  • Option: stir in some mini pepperoni

Preparation

Step 1

Pierce squash all over. Microwave on high 14 minutes or until tender. Let cool. Cut squash in half, discard seeds. With fork, scrape squash into strands in a medium bowl.

Mix in olives, cheese, parsley, olive oil and red wine vinegar.

Serves 4
