aDressing: Mustard Herb Vinaigrette

Ingredients

  • 1 hard boiled egg yolk (the makes the dressing extra creamy)
  • 3 Tbsp. white wine vinegar
  • 1 Tbsp. grainy Dijon mustard
  • 1 Tbsp. water
  • 1/2 tea. minced garlic
  • 1/2 tea. salt
  • 1/2 tea. pepper
  • 5 Tbsp. olive oil
  • 2 tea. chopped fresh tarragon,m basil or parsley

Preparation

Step 1

In a blender puree egg yolk, mustard, water, garlic, salt and pepper. With blender running, slowly add olive oil until emulsified. Pour into a bowl; stir in chopped herbs
