Crockpot Roasted Whole Chicken

Tender, juicy roasted chicken that won't heat up the house! And no messy oven to clean! Even the leftovers remained moist and delicious.
Ingredients
- 1 whole chicken
- Salt, garlic salt, pepper, and paprika, to taste
- String to secure legs, optional
Preparation
Step 1
Remove lid from a 6-qt crock pot and preheat while you prepare the chicken.
Rinse and pat chicken dry with paper towels. Lightly coat chicken with olive oil or olive oil cooking spray. (I used my hands to smear it in.) Season chicken as desired.
Place chicken, breast side up, on a small rack inside the crock pot or 3 - 4 balls of wadded up aluminum foil to keep the chicken out of the juices as it cooks. (You can also use a vegetable steamer basket if it will fit inside your crockpot.) Tie legs together, if desired.
Cover and cook on HIGH for 1 1/2 to 2 hours (3 to 4 hrs on LOW), or until the thickest part of chicken registers 180 degrees on a meat thermometer. (The actual cooking time may vary depending on size of chicken and crockpot cooking temperature).
