Ingredients

  • Cake
  • 2 Cups Sugar
  • 1/2 Cup Butter
  • 1 Cup Buttermilk
  • 1 tsp salt
  • 2 Cups Coconut (packed)
  • 5 Egg-yolks (Retain Egg Whites)
  • 1 tsp Vanilla
  • 2 Cups Pecans (chopped)
  • 2 Cups Flour
  • 1 tsp Baking Soda
  • Icing
  • 1 Box Powder sugar
  • 1 Stick Butter
  • 1 tsp Vanilla
  • 1 Cup Coconut (packed)
  • 1 Cup Pecans (chopped)
  • 8 oz. Sour Cream (don't use all; wait to see if icing is too thick)

Preparation

Step 1

Cake
Mix ingredients in order
Beat Egg Whites till stiff and fold into cake mix.
Pour into two round cake pans
Bake 325 degree pre-heated oven for 45 minutes.
Test with tooth pick

Icing
Cream sugar, butter, add sour cream, add remaining ingredients. (add more sugar or sour cream to for consistency.
