Green Bean Casserole

Ingredients

  • 1 1/2 lb. green beans, trimmed
  • 1 Tbsp. virgin olive oil
  • 1 Tbsp. margarine or butter
  • 1/4 large sweet onion, finely chopped
  • Salt and pepper
  • 2 pkgs. (8-oz. each) sliced cremini mushrooms
  • 2 Tbsp. flour
  • 1 cup milk, warmed
  • 1 tsp. fresh thyme leaves, chopped
  • Pinch of cayenne pepper
  • 1/4 cup crunchy fried onions

Preparation

Step 1

1. Cook green beans for 5 to 10 minutes. Drain and transfer to a serving dish.

2 In a skillet, heat oil and margarine on medium heat until margarine melts. Add onion, 1/8 tsp. salt, and pinch of black pepper. Cook 6 minutes or until golden and tender, stirring occasionally.

3. Stir in mushrooms and 1/4 tsp. salt and cook 8 minutes or ntil tender and juices have released and begun to evaporate, stirring occasionally.
