Ingredients
- Cake:
- 6 egg yolks
- 1 c. sugar
- 1/2 c. boiling water
- 2 tsp. vanilla extract
- 1 Tb. frozen orange juice concentrate
- 1 3/4 c. cake flour
- 2 1/4 tsp. baking powder
- 1/2 tsp. salt
- 20 oz. salted, roastd peanuts , ground
- Butter Frosting:
- 1/2 c. butter , softened
- 4 1/2 c. sifted powdered sugar
- 1/4 c. milk
- 1/4 tsp. salt
- 1 tsp. vanilla
Preparation
Step 1
Cake: In a mixing bowl, beat egg yolks until thick and light in color, about 5 minutes. Add sugar. Slowly add boiling water, vanilla, and orange juice. Stir dry ingredients into egg mixture and beat with mixer for about 2 minutes. Pour batter into greased 9x13" baking pan. Bake in a 350 degrees for 20 minutes or until toothpick inserted in center comes out clean. Cool. Cut cake into 30 pieces. Remove the brown crust on any edges. Frost each piece on all sides with Butter Frosting. Roll in ground peanuts.
For the Butter Frosting: In a mixing bowl, cream butter and 2 cups of the powdered sugar. Add milk, salt, and vanilla. Beat in more powdered sugar until frosting consistency.
